Trabzon, the old city of the Eastern Black Sea, is also known for its unique culinary culture. Limited geographical areas resulting from the difficult geographical conditions of the Black Sea do not allow production, except for a few food products. Corn, black pepper and anchovies are the flavor trio of the Trabzon cuisine. Especially anchovies have created a strong cultural value. Studies in Trabzon culinary culture have focused especially on these symbolic foods.
