Culinary Studies / Black Sea – Kastamonu
The rich ecology of Kastamonu, located in the western Black Sea region in northern Turkey, also reflected in culinary culture. Tarhana soup, rice and meat pried are among the symbolic foods. In the districts, neighbourhood ovens that are still in use today create collective food cooking environments. Research and documentation was conducted of Kastamonu culinary culture in which different kitchen characters diversify food products obtained from mountains, plains, lakes and forests.
